Because of the cold snap here in southern Georgia, we had to finish harvesting the lemons.
Now that the lemons are harvested and I am begging the neighbors to take some off my hands, I am still left with a lot of lemons to deal with. Naturally I am deciding how to make my lemons last until the next year's harvest. I started by juicing lemons and freezing in ice cube trays. That way I will have frozen lemon juice to use throughout the year.
I like to keep lemon water (no sugar) in the fridge
Because my husband loves lemon merinque pie...
I love the pie in a jar idea because they are easy to throw in the lunch box.
